Cajan Sloppy Joes

Ingredients:

2 lbs. grass-fed ground beef
2 cups diced onions
1  green bell pepper, diced
1 cup celery, diced
2 Tbls. minced garlic
2 10.75 oz. cans tomato puree
1/4 cup tomato paste
1/4 cup brown sugar
1/4 cup water
1 Tbls. tabasco sauce
2 tsp. salt
2 tsp. paprika,
2 tsp. oregano,
2 tsp. thyme
2 tsp. black pepper

Directions:

Brown 2# beef over medium heat till cooked through, crushing with a potato masher; drain all but 1T drippings. 
Transfer to slow cooker.
Sauté 2 c diced onions, 1 green bell pepper diced, 1 c celery diced over drippings until softened (5-6 minutes). 
Add 2 T minced garlic and cook 1 minute more. 
Transfer to slow cooker.
Whisk 2 cans tomato puree (10.75 oz each), 1/4 c tomato paste, 1/4 brown sugar, 1/4 water, 1 T Tabasco sauce, 2 t salt,
2 t each of paprika, oregano, thyme and black pepper.  Add to slow cooker and mix all together.
Cook until flavors have blended on high for 2 hours or on low for 4 hours. 
Serve on toasted French bread or rolls.
