Ground Beef Pot Pies

Ground Beef Pot Pie:

Ingredients:

2 pie crusts
1# ground beef
2 Tbs. butter
1 yellow onion, chopped finely
2 celery stalks, sliced thin
1/3 cup flour
2 cup beef broth
1 cup milk
1 tea Worcestershire sauce
1/2 to 1 tsp salt
1/2 tsp pepper
12-16 ounces frozen mixed peas and carrots (about 3 cups) - or add 3 cups of vegetables you have on hand - potatoes, green beans, zucchini, corn, and tomatoes all work well

Instructions:

1.  Preheat oven to 425 degrees
Place one pie crust in a deep dish pie plate, prick with fork and set aside.  In a large, deep skillet, over medium high heat, cook and crumble the ground beef.  Transfer the beef to a bowl.

2.  In the same skillet, melt the butter.  Add the onions and celery and cook for about 3 minutes until soft.  Stir in the with flour.  Then add beef broth and whisk to combine.  Cook for two minutes until thickened.

3.  Add the milk, Worcestershire, salt and pepper.  Reduce heat and simmer until thickened, about 5 minutes.  

4.  Add the cooked beef and vegetables to the sauce and stir.  Pour the mixture into the bottom pie crust.  Top with remaining pie crust.  Seal the edges.

5.  Make a few slits in the top so steam can escape while baking.

6.  Bake for 35 to 40 minutes, or until the filling is bubbling and the crust is golden. (Cover with foil to avoid over-growing if desired.). Cool for 10 minutes and serve!

Mix in a medium bowl and set aside: 

4 cup white flour
1 Tbs. sugar
2 tsp. salt

Cut in to the dry ingredients:

1 3/4 shortening

Combine in a small bowl, then add to the mixture in the medium bowl:

1 tsp. vinegar
1 egg
1/2 cup water
